Stories

Mallorca has a rich artisan cheese tradition, and in addition to the best known cheeses, there are small dairies that produce authentic gastronomic jewels with raw sheep’s, goat’s or cow’s milk. These cheeses are characterized by their careful elaboration and unique flavor, reflecting the terroir and the passion of the producers.

Some of the most outstanding artisan cheeses in Mallorca are:

  • Quesos Burguera: This family cheese factory makes cheeses with raw milk from their own Friesian cows. Their semi-cured cheese is soft, buttery and with a delicate flavor. They also offer other varieties such as cured cheese, soft cheese and cottage cheese.

  • Quesos Son Jover: This organic cheese factory makes cheeses with raw milk from Mallorcan red sheep and Malaga goats from their own herd. Their cheeses stand out for their intense flavor and creamy texture, and they offer varieties such as cured, semi-cured, soft and mixed cheeses.

  • Formatges de Fet a Sóller: This cheese factory makes artisanal cheeses with raw sheep’s and goat’s milk from local farmers. Their cheeses have an authentic and traditional flavor, and offer varieties such as cured, semi-cured, soft and with aromatic herbs.

  • Can Garroví goat cheeses: This cheese factory specializes in goat cheeses made with raw milk from their own goats. Their cheeses have an intense and slightly spicy flavor, with a creamy and melting texture.

In addition to these dairies, there are other small artisanal producers that make cheeses with raw cow’s milk, such as Formatges Santa Catalina or Formatges Es Tudons.
