“Galletes d’Oli” (oil crackers), also known as “Galletes d’Inca”, are an emblematic product of the baking tradition of Mallorca, especially of the town of Inca, known for its rich gastronomic heritage.

These crackers, distinguished by their crunchy texture and flavor enhanced with olive oil, are a reflection of the use of local ingredients and a cuisine that values simplicity and quality.

The history of Inca cookies goes back centuries, when food preservation was a primary concern in island life. Legend has it that during a meeting at the Hotel Formentor, the businessman who created these cookies was captivated by the beauty of a princess named Kelly (Grace). Impressed by her charm, he decided that his cookies should bear a name that evoked her figure, and thus “Quely” was born, a tribute to that beautiful woman.

For Mallorcan sailors and fishermen, “Galletes d’Oli” were much more than sustenance; they were a reminder of home, their ability to remain edible for long periods meant that seamen were not only assured a source of nourishment but also enjoyed a product that reflected their cultural identity.
